Description:
got this recipe from one of the episodes of nigella feasts.
she used pork, so i replaced it with chicken of course.
very easy to make and it's healthy. well, almost.

Ingredients:
breaded chicken breasts:

2 chicken breasts without skin
1 egg
1/2 tsp dry oregano
1/2 tsp dijon mustard
pinch of salt + pepper
1 cup white breadcrumb
oil to fry


spinach salad:

spinach leaves
2 tomatoes
1 clove garlic
pinch salt + pepper
juice of half lemon
olive oil

Directions:
1. mix egg, salt + pepper, mustard & dry oregano. dip in over the chicken breasts & cover with breadcrumbs.
2. heat loads of oil & deep fry the chicken breasts for about 7 minutes or until golden brown. turn over the chicken breasts & leave it for another few minutes.
3. wash & drain the spinach leaves.
4. cut the tomatoes & remove the seed. coarsely chopped & & place into a bowl.
5. add grated garlic just for heat, salt + pepper, lemon juice & olive oil. mix in the spinach leaves.
6. serve with bread.
